Sloppy Joes

Sloppy Joes are something we loved growing up, so I wanted to create my own version, which I may have to call Messy Jimmys! We always serve them with chips or tater tots. I also like to toast the buns, so they hold together a little better and I love the slight crunch.

Ingredients

  • 2 lbs ground beef
  • 2 tablespoons olive oil
  • 1 yellow pepper
  • 1 red pepper
  • 1 medium onion
  • 1 tablespoon minced garlic
  • 1 28 oz can of tomato purée (or 4-5 cups of fresh tomatoes, cooked down and pureed)
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup tomato paste

Instructions

  1. Dice the peppers and onion and sauté in olive oil in a large stockpot or Dutch oven (4-5 quarts). Cook until the onions become a little translucent and the peppers are tender, about 10-12 minutes, adding the garlic in the last 1-2 minutes.
  2. Cook the ground beef in a large skillet, just until cooked but not browned, breaking it up so there are no clumps. Drain off the excess fat, and add to the onion and peppers when they are done.
  3. Add the puréed tomatoes, Worcestershire sauce, brown sugar, salt, pepper, and tomato paste.
  4. Cook on medium/low heat until thickened, 15-20 minutes. Stir often to prevent burning.
  5. Serve on large buns. I like to toast the buns so they hold together a little better.
